FERMENTATION: WHERE GENETICS BECOMES FLAVOR
Even the best genetics in the world produce unremarkable chocolate without careful fermentation. This is the stage most often overlooked in popular explanations of chocolate, yet it is where the majority of the flavor precursors are formed.
After cacao pods are harvested and opened, the fresh beans are covered in a white, sugary pulp called mucilage. This pulp is what drives fermentation. Over five to seven days, naturally occurring yeasts and bacteria transform the pulp sugars through a succession of microbial stages: yeast fermentation first, followed by lactic acid bacteria, then acetic acid bacteria.
